The collection was not assembled variety by variety. It was composed as a single range, with each wine given a clear role at the table.

The reds

Cabernet Sauvignon anchors the range with structure and firm tannins. Merlot is its softer counterpart. Shiraz brings pepper and smoke, and Saperavi — the one indigenous voice among them — brings depth and acidity that make it the most age-worthy of the four.

The whites

Sauvignon Blanc opens the meal, Chardonnay carries the main course, and Muscat closes it.
